In the contract of insurance there is an Appraisal Clause that generically states:

If you and we do not agree on the amount of your claim, each party will hire, at its own expense an appraiser, they will then agree upon a competent and disinterested umpire.  Each appraiser will separately determine the value of the property and the amount of the loss.  If they cannot agree on the value of the claim they will submit their differences to the umpire.  An agreement between two of the three parties will be binding.
